The Saint-Joseph red and white wines from Maison Paul Jaboulet Aîné pay homage to Victor Hugo's 'Légende des siècles'. Inspired by a historic battle, the name references a famous verse: 'Et du vin de ce vin qu'aimait le Grand Pompée'.

GEOLOGY
Light soil of schist and gneiss resting on a granite base.
VINIFICATION
Hand-picked at maturity and directly whole bunch pressed. Low temperature alcoholic fermentation in stainless steel tanks, concrete eggs and partially in French oak barrels.
AGEING
The wine is aged on fine lees during 8 months in concrete
eggs, French oak barrels and stainless steel tanks.
SERVING TEMPERATURE
Ideal serving temperature is around 12 to 14°C.

Grilled zucchini and eggplants, Carbonara pasta, Roast chicken, Seafood, Soft cheeses like Brie or Camembert
